The thick, rich soup is flavored with generous amounts of Choshu no Isomori sea urchin and boiled turban shells to enhance the sea urchin and give it a more seafood-like flavor. Dip Hagi purple pufferfish in the soup and add Choshu no Isomori sea urchin for a true sea urchin experience.

魚介は厚めにさばかれたマフグと、タイ、「長州の磯守」。野菜は水菜とエノキの湯葉巻き、しめじ、豆腐など。しゃぶしゃぶにすると甘みがでる紅芯大根も。

Our shabu-shabu uses a rich soup made from sea urchin and white miso and is served with two or three varieties of fish, such as purple pufferfish. The fresh fish is topped with Choshu no Isomori sea urchin and served with a refreshing dipping sauce made from kelp broth, sea urchin paste, and yuzu juice.
