Choshu Dori bone-in steak

This unconventional bone-in steak goes well with white wine.
Made by the proprietor without sparing any effort, it consists of approximately 350 grams of bone-in thigh meat that is seasoned with herbs and garlic, allowed to sit overnight, and is then braised in oil at a low temperature (confit style). It is baked further in the oven to enhance the aroma. Basil is added to the tomato sauce, and the acidity of the tomatoes and freshness of the basil go well with the meat’s rich flavor. It comes as a set meal with appetizers.

Point
The braising in oil is done at about 75°C for about three to three-and-a-half hours. Cooking it slowly at a low temperature produces surprisingly moist chicken without losing any flavor.

This lunch set, which combines Choshu Dori with local beef, is a great value!
We take Choshu Dori thigh meat, cut slits in it, season it with herb salt, and cook it thoroughly with a weight on top of it. We then slowly grill the other side. Because Choshu Dori is so thick, cutting slits into it first makes it easier to cook and gives it a plump texture. The sauce is made with special honey mustard.

Sauce flavored with refreshing summer oranges engulfs the flavorful Choshu Dori
Each dish uses one Choshu Dori thigh. To ensure tenderness, it is vacuum cooked at 67°C for about two hours and then browned in butter and oven-baked on a skillet for another three or four minutes. The secret ingredient in the refreshing homemade sauce is juice from Hagi-grown summer oranges.

Sukiyaki-style steak — a blend of Japanese and Western flavors — is a delicious meal that should be enjoyed with rice!
We coat Choshu Dori thighs with flour and lightly brown both sides in a frying pan. We then simmer it in a soy sauce-based sweet and spicy sauce together with mirin and sugar to tenderize it. Finally, we top it with cooked summer orange peel. The chicken absorbs the flavor and sweetness of the orange.

The initial flour coating adds thickness and keeps the chicken tender after it cools. The sweet and spicy sauce is perfectly seasoned and goes well with rice.
